Yesterday, when I stopped by the store on the way home to buy som yoghurt they had a near the entrance display of mangos on sale. This reminded me of the mango lassi drink we used to get at the Indian restaurant when I lived in Oregon and had a boyfriend who loved going out to eat.
So, of course I bought a mango. Then, inspired by thst memory, I invented a custard recipe that is amazing:

Mango Carrot Custard
1 medium mango (~1.5 c)
1 large carrot (~1.5 c)
3 eggs
3 dl turkish yoghurt
2 teaspoons rice flour
3 tablespoons almond meal
Pre-chop the mango and carrot into reasonable sized bits with a knife and then use an immersion blender to blend them smooth. Add the rest of the ingredients one at a time and blend smooth.
Bake at 150 C in buttered glass pan till just set.
Tastes like desert, but ingredients wise it is more like a meal. It was amazing last night hot and absolutely wonderful today cold.
I wonder how it would work to substitute vegan crème fresh if feeding someone who can't eat dairy? Or even make vegan with an egg substitute. If anyone tries that, please report back.
