Best lasagna I have ever had

I need to thank the folk in the Drachenwald Slack Food channel for the lasagna discussion the other day, where it was mentioned that one can use very different layers of filling. That had never occurred to me to try, but I had some spaghetti sauce I made the other day from: moose, walnut, sunflower seeds, tomato, black currant, kale, spinach, VÀsterbottensost (a local cheese), cheddar, hushÄllsost (probably the most common Swedish cheese), garlic, butter, and spices (including everything green in the spice cupboard and I don't recall what else, but nutmeg and pepper would have been involved. I thought that would make a great lasagna layer, so I put it in the fridge, and yesterday made a really yummy green sauce from blended spinach and nettles with almond meal and kvarg (google translates that as cottage cheese, but it is more like a high-protein version of yoghurt) and chunks of zucchini and broccoli, pistachios and pumpkin seeds.
I today I layered them up with home-made egg noodle dough (not precooked) and baked them. The 13x9" glass pan was deep enough to do two generous layers of each sauce, alternating, starting with the red. The 9x9" glass pan was deep enough to do five layers (3 red, three green, but the green layers weren't as thick as the first pan because that was how much was left). Tried them both after they had come out and sat a bit to meld (because I needed a nap just as they finished baking), and OMG are they amazing! I have now filled three plastic ice cream boxes with yummy goodness and put them into my freezer to take with me camping next weekend. My future self is so going to love me!
