Last night I had a note from a friend in Alaska who has a MySpace page, and having heard from him I wandered over to look at his photographs. One of them triggered a craving for the buttery-sweet goodness of a freshly baked cinnamon roll. However, at that time the afternoon was rapidly turning evening, and I've got this weird quirk wherein my appetite turns off in the evenings and I lose all interest in food, so I knew I wouldn't have time to do proper yeast-based rolls before it switched off.

I gave it a few seconds of thought, and decided that a quick way to yield to the craving would be to adapt a batch of scones to fit the niche, so I went off to the kitchen to have some fun. I tossed a couple of cups of flour, a tablespoon or two of butter, a couple teaspoons of baking powder, and perhaps a tablespoon of sugar into a bowl, worked it together and added a most of a cup of milk. I then rolled it out to about 6 mm thick and spread it with butter, cinnamon and sugar, rolled it up, used some string to slice the biscuits and baked them. I had just enough time while they were in the oven to wash up the mess and combine plenty of butter with powdered sugar and milk to make a frosting before they came out of the oven.

Yum!

Not the same as proper yeast-based rolls, but quite nice nonetheless. Fortunately, the boys liked them, so they all disappeared straight away. The two small ones I had were more than enough for my small appetite. It is pretty rare that I have a sweet tooth, so it is fun to indulge it when it happens.

Mmmmmm, YUM!
I think I shall have to try that too. I invited some grandkids to dinner tonight and forgot to plan a dessert. That ought to do!

If you want them pretty, let them cool a bit before frosting. I didn't, and as I made a very butter-rich powder-sugar frosting, it melted. However, I rather like it that way, so didn't mind.

Let me know how it comes out and if they like it!

EEK! I'm out of flour.

I guess I'll just have to pass out some Girl Scout cookies!

Oh, no! Flour is terribly important for baking.

Ya think?

I guess I probably had it on the list and forgot. I have pancake mix, and considered trying to do it with that, but ... well, I decided not to.

Depending on the type of pancake mix, it might work quite well, actually. Most of them already contain the fat (and yes, butter tastes better, any fat will make for a good scone/biscuit) and leavening agency, and some of them already have the sugar too, just use a bit of milk or water (if yours contains powdered milk) and stir it up. I'd guess that one batch would use about 2 cups of mix and 3/4 cup of liquid to get a reasonable dough.

Go for it! If it doesn't work, you've always got the girl-scout cookies as a back-up plan!
