Banana Brownies

The other day I accidentally purchased a container of sweetened yoghurt instead of the plan yoghurt I prefer. I used a bit to make a batch of naan, and was rather disappointed with the result—naan is *much* better when made with plain yoghurt. So, what to do? I don’t ever eat yoghurt straight, and if I did I certainly wouldn’t eat a sweetened version, ick! Now that I’m living alone there isn’t any point in baking a cake or cookies with it—I don’t need as much sweet stuff in the house as that volume of liquid would produce. Then I noticed the two bananas I had sitting around, and came up with my answer.
Banana Brownies
2 Tablespoons butter
1 egg
1.5 cups sweetened yoghurt
1 cup white flour
¾ oat flour
¾ almond meal
1 cup chopped walnuts
2 bananas
Cut the butter into the flour like for a pie-crust, add the oat flour, then mash the bananas into the butter/flour mixture. When it achieves a smooth paste texture beat in one egg, add the almond meal and the yoghurt. Stir in the walnuts and bake in a small cake pan at 175 C for ~35 minutes. Makes a pleasant rich chewy snack that is only lightly sweet, and would provide plenty of energy for a hike.
If you prefer lighter baked goods you could add baking powder, but I’m not certain if/how that would change the baking time.
Next time I'm in the store you can bet I will read the label more closely to be certain that my yoghurt doesn't contain "zucchero", but if accidents ever happen again, I know what to do about it.
